Ingredients
- 1 cup oats
- 1/2 cup walnuts (rich in omega 3)
- 1⁄2 cup dates (soaked and drained)
- 1 teaspoon grated orange rind
- 1 tablespoon of orange juice
- 1 large or 2 small carrots (peeled and grated)
- 1/3 cup canned pineapple (pieces/crushed, drained)
- 1/3 cup desiccated coconut
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon ginger
- 1⁄4 teaspoon nutmeg
Instructions
Grind oats into a coarse flour then add all the other ingredients and blend. Using wet hands roll into balls then roll in desiccated coconut. Makes around 30 small balls. Store in the fridge.
